Oregano Chicken

This is yet another favorite in our household!  Oregano Chicken.  This recipe is actually just the “broth” that the meat is cooked in, so you could use this recipe with meats other than chicken and have it just as tasty.  We use a lot of chicken and turkey breast in our house so these are the two that I have used it with.

Servings:  Makes 4

INGREDIENTS:

1 tablespoon and 1/2 teaspoon Worcestershire sauce

1 tablespoon and 1/2 teaspoon soy sauce

1/2 teaspoon garlic powder

4 skinless, boneless chicken breast halves

DIRECTIONS:

  1. Preheat oven to 375 degrees F.
  2. Combine the melted butter or margarine, lemon juice, Worcestershire sauce, soy sauce, oregano and garlic powder. Mix well.
  3. Place chicken in an ungreased  baking dish (I use a 9×9 baking dish). Pour the butter/oregano mixture over the chicken. Bake in the preheated oven for 15 minutes. Baste juices over the chicken. Bake for an additional 15 minutes. Transfer the chicken to a serving platter and serve the pan drippings over hot cooked rice, if desired.

I actually don’t use the pan drippings as trying to make it a little healthier with the butter that is used.  It keeps the meat moist and gives it a delicious flavor!

LAST WEEKS GOALS:

1) Complete ALL of my P90x workouts. – I got all but my yoga workout. My husband came home Thursday evening after being gone since Tuesday evening so enjoyed some family time and got a walk in.

2) Run at LEAST 3-4 times this week. WIN! I got in 3 runs!

3) Take at LEAST 3-4 walks with my family this week. – Score! Got 4 walks in with the family. Love these evenings!

4) Finish all my notes for work daily (new rule for work) – Done!

5) Enjoy my “girl day” with my daughter on Wednesday before she starts back to school! – Sofie and I had TONS of fun. She chose to go eat at Cici’s pizza (not a fan but I let her choose). I felt kind of bad because she loves that place because of the brownies and they had NONE! I might add before lunch we got all of our errands done AND worked out.

After lunch we went to see Despicable Me 2, which I must add is super cute! I had never seen the first one so now I must see it.

1) Again complete ALL of my P90x workouts. Only 4 more weeks to go!

2) Run at LEAST 3-4 times this week.

3) Take at LEAST 3-4 walks with my family.

4) Sign up for the Tulsa Run 15k.

5) Survive our first full week of the new school routine.

Get-Back-To-It-Challenge

 

Oh boy, last weeks Get Back To It Challenge was a BIG flop!  We read one night the whole week!  Failed on that one big time!  The one night we read a “gaga” (dog) book for my son and he was NOT interested whatsoever!  My daughter however did check out 5 chapter books from the library and finished all of them in the course of 3 days!  She did LOTS of reading!  So this week, my Get Back To It Challenge is getting into bed by 11 pm and reading of my own!

1st Week of School

So the first week of school, well two days in our case was a SUCCESS!  I walked my daughter in as always on the first day since she was at a different school this year.  (They moved her whole elementary school to a nearby middle school for the year while they remodeled her older elementary school.)   As usual parking was scarce and traffic was crazy, however the traffic come pick up time was crazy ridiculous!  They are only allowing car riders and bus riders this year. NO walkers due to the fact that there are no sidewalks for the students to walk on, nor is there close by parking for parents to park at for students to walk to.  After seeing the crazy traffic come pick up time (people couldn’t cross the intersection without blocking it for a very long time), I chose to park and WALK to her.  Even though I had to wait for probably 20 minutes til I got her, it was much faster than waiting in THIS line.

I might add that the line was still just as crazy when I drove home with her in hand!

Day #2

She managed to find her way to her classroom without Mommy’s assistance despite all the begging and puppy dog eyes for me to walk her in.  Pick up time went a little better, but still slower than I would have liked.  I’m hoping that they will find a way to accommodate the walkers again and let students out a different door that parents are picking up AT the door vs being a car rider.  Next week will be our first FULL week being back in school and than we come to a holiday already, Labor Day!

Babysitter Without Big Sister

Taylor seemed to do well at the babysitter without having his big sister to defend him.  He is still quick to tell us good-bye and rushes off to play.  Not of course before coming back and leaning his head into me to give me a “kiss”  (aka me kissing his forehead).  I did have my first incident with biting though!  Since all the school age children are back in school, the babysitter had several new, little kids for Taylor to play with.  One being a little boy that is ~1-2 years older than Taylor.  Well Thursday night as I was getting Taylor ready for bed I noticed bright red teeth marks on his back.  No broken skin thankfully.  It didn’t seem to bother Taylor any.  I have never had this issue with Sofie or HER biting anyone when she was little so this was all new to me.  So on Friday, I asked the sitters if they had issues with any of the little kids biting and they said they hadn’t noticed any.  I showed them Taylor’s back and they were both quick to agree that that was a bite mark.  They were quick to apologize that they hadn’t caught it in action, but than thought back to the day before and they had pulled a new little boy off Taylor.  They had been playing and apparently the little boy pinned Taylor to the ground and they pulled him off Taylor who was screaming and they thought it was from being pinned down, not from being bitten.   As a parent I know this is a normal issue with little kids, however it was new to me not having to deal with it before.  I felt so sad for my sweet, little boy.  The thought of him being pinned down by another little boy breaks my heart!  Although he is okay and not hurt, it still doesn’t keep me from feeling like I want to beat that little boy’s booty!  😛  No one messes with my babies!  I know he is in WONDERFUL hands with the sitters though!  <3

Garlic Lemon Chicken

This recipe is by FAR one of my new favorite recipes!  It is SO flavorful and delicious!

INGREDIENTS
6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced – I USE 3 LEMONS, 1 JUICED AND 2 FOR SLICING
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 pound trimmed green beans
8 small red potatoes, quartered
4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)  – I USE BONELESS, SKINLESS CHICKEN BREAST AND IT TURNS OUT JUST FINE!

DIRECTIONS
Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.  (We have tried this step a couple different ways,  ON THE BOTTOM – the green beans are rather lemony flavor but the chicken doesn’t have a lot of “lemon” flavor.  ON THE TOP – wonderful lemon flavor to both green beans AND chicken!)

In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices.

Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans.

Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.

This is what the finished product looks like before going into the oven with how my husband loves it.  (ORIGINAL recipe wants the lemon slices on the very BOTTOM of the pan)

Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.

I felt really bad about missing the 30 days of planks, but than I made up for it with the other goals, so I won’t be too hard on mysel!

Well, I will keep the same goal!  I won’t say that I didn’t accomplish last weeks part, due to the fact that my daughter chose to do the reading.  However we got a  couple of books about “gagas” (my son’s term for dogs), in hopes that he will sit and listen to a book a couple nights this week.

6)  Get my house cleaned and laundry finished before the weekend. DONE!

My goal last week was to read a book every night to my kids.  We did this 4 out of the 7 nights.  THIS week my goal is to continue this goal as this is something I enjoy!  🙂  Have a great week everyone!

Diva Dash Tulsa

So Saturday was the first inaugural Diva Dash 5k here in Tulsa.  It was AWESOME!  My goal was to run it in 30 minutes as it has been so hot and humid here, it’s been hard to judge pace and it has varied during training so much.   Well I am happy to announce I crushed my goal!  Official chip time was 28:59!  I was so happy to see that!

The start was slow as everyone was getting out of the shoot like normal.  I get so frustrated with people when they walk 3+ abreast and take up the whole street.  Races are just like driving, slow moving traffic to the right.  However once got passed the first half mile everyone started to spread out.  The weather was gorgeous for running, cloudy and overcast but no sign of actual rain, with an awesome temp of 73 degrees AND a cool breeze!  My sister in law and I were actually kind of cool just standing around waiting for it to all start.  I think somehow my iPhone was also determined to keep me moving because for whatever reason I kept getting all my fast tempo songs and my pace just kept getting faster and faster.  I kept paying attention to my breathing and how I felt, and I was feeling wonderful so I just get going with it.  I even managed to sprint at the end so I’m sure I could have picked up the pace even more, but I’m proud of what I did.  Can’t wait for the next race!

Completely Exhausted

So I think the late nights/early mornings has finally caught up to me. I’ve been busy staying up late with work, getting stuff done around the house, completing continuing education, and answering emails. My mornings usually consist of exercising, getting dishes done and various other household chores on top of the morning ritual of getting kids ready for the babysitter. This week has been a little more relaxed since the neighbor girl has been coming to the house to watch the kids this week, however here in less than 3 weeks we will be starting the back to school routine. I can’t believe Sofie starts 2nd grade this year. What happened to the time? She is starting to get excited for school to start. She will be in gifted this year. Hopefully she will enjoy it.

So this upcoming weekend, the hubby and I will get a quiet weekend, camping, scuba diving, and canoeing all to ourselves! My sister in law and her boyfriend will be here visiting this weekend. Her and I are running in the Diva Dash 5k Saturday morning, than the hubby and I will hit the road to our favorite, nearby lake, Beaver Lake! If you have never been there, I highly recommend it! It is gorgeous there! Nice, quiet, and peaceful!

Get-Back-To-It-Challenge

Since it is August…it’s time for a new challenge! This month’s challenge is geared around Back to School. For some of you I know that time is in September but in my part of the world that time is now. This month I want you to think of one thing in your life that you used to do and wish you were still doing. Maybe you used to exercise 4 days a week. Maybe you used to cook more meals for your family. Whatever it is…this month let’s Get Back To It!

AND my #8 goal of the new challenge:  Read a book to my kids every night!  Miss our story times!  <3

August Adventures

So for those of you who don’t know.  I am a goal setter and a list maker.  I like to write down my goals and make to do lists.  Maybe this is the therapist in me, but these goals have to be objective.  They have to be measureable in order to show progress.  So for the month of August I have a few goals in mind:

  1. Run at least 50 miles
  2. Sign up for two races
  3. Log 1000 minutes of exercise time.

Race wise, I already have one 5k coming up, the Diva Dash on August 10th with my running buddy/sister in law.  I also plan on doing the Tulsa Zoo Run in October and hopefully another one called the Neon Vibe 5k in November with one of my friends that is fairly new to the whole running scene.  Hopefully once she sees the fun in these, I will get her hooked!  Little does she know, I have plans for her!  I need someone in my corner when it comes to this exercise business and her husband and mine are too much alike in the exercise department.  My husband is the first one to say “I hear of more runners dying from running than I hear from people sitting on the couch.”  That is my husband for you!  I love him though and wouldn’t trade him for anything even though we vary differently in this exercise department!

On to other August Adventures, school starts back August 22nd.  Since when do I have a 2nd grader?!?   Luckily this weekend is tax free weekend, so guess where we are going this weekend?  You got it, out into the stores with all the other crazy people trying to get good shopping deals.  Now if only I can stunt my daughter’s “daddy long legs” so we can find pants that fit her better than we will be doing awesome!  My daughter happens to be tall AND skinny!  AKA a pain in the rear for Mommy to find pants/shorts that fit her correctly.  To find jeans to accomodate these “daddy long legs” of hers than they are too stinkin’ big and even with the adjustable waist band hardly stay up on her hips.  Than if we move onto shorts, these normal length shorts become daisy dukes on her and I just refuse to let that happen!

 

Oh boy oh boy oh boy!  Let the fun begin!
