Applesauce Oatmeal Pancakes

Another of my families favorite recipes. This one I’ve made for a few years now and have made several alterations along the way. To me, these tend to stick with you longer than normal pancakes. Plus they are just as good leftover and cold. Similar to oatmeal cookie.

1/2 C flour
1/2 C Oatmeal
1/2 C milk
1/4 C sugar
1/2 C applesauce
1 Tbsp Canola oil
1 Tsp baking powder
1/2 Tsp soda
2 egg whites

Directions:
Mix ingredients all together to make batter. Make pancakes like usual. Makes about 6 small 4-5″ pancakes.

My alterations:

Add in cinnamon to taste.
Used vanilla soy milk in place of milk. Most of the time I use skim milk
Splenda in place of sugar.
Used various different flavors of applesauce, most often cinnamon applesauce.
My family likes to top these with peanut butter, canned cherries and cool whip.
